Confession:

Over Easter, I completely broke my no-sugary treats plan of action. Badly. So badly that I ate a whole chocolate bunny. The thing is, once you don’t have those lovely treats for awhile… They end up tasting SO MUCH BETTER when you do have them. It was pure chaos, insanity and love happening all at once.

So of course, being the Catholic that I am, I felt horribly guilty afterwards. I tried to make up for it by making a salad from the Le Creuset website called the Fig and Pecan Salad. This was composed of radicchio, red leaf lettuce, pecans, BACON and figs. There was also a balsamic vinegar based dressing that you could make to go with it.

I don’t know if it was because my body was thriving on sugar or because my taste buds were in full revolt but it turns out that the bitterness of radicchio does not register as yummy for me. I may have made Mr. Yuck faces while eating this. I also wanted to pick out the figs because I was childish enough to say “Ewww!” everytime I got a bite of one.

However, when I got a bite of lettuce with some of those pecans and bacon (God bless the bacon), covered with that dressing, it was actually quite good and I rather enjoyed those bites… Once I eliminated the figs and radicchio of course.

What can I say? My journey to eat better food is going to be an arduously slow one.

  • Aww there are just some things you don’t enjoy. The salad is still a healthy meal without the figs & radicchio. 🙂

    • Lol, I’m terrible with my diet. I think my taste buds have been trained to only like unacceptable things!

      Maybe someday figs and radicchio will hold charm for me but definitely not anytime soon!

  • Bacon and lettuce is like sin and redemption in one bite. Sounds delicious though, with balsamic vinegar
