Blueberry and Mint Smoothie
from The Vegan Cookbook for Beginners
Since joining Barre class I figured I should be eating healthier but that is so much easier said than done. Of course I’m going to eat donuts and slather everything with butter then eat a piece of broccoli covered in Ranch and congratulate myself on my healthy eating choice.
Which is why I decided to buy a vegan cookbook. I have zero intentions of actually becoming a vegan. I just figure if I make the recipes in this book, they’ll be devoid of bacon and ice cream, two things which are apparently “bad” for you. What do they know anyway? Bacon and ice cream make me HAPPY.
Delights of all delights, the first recipe in the book was a blueberry and mint smoothie. YAAAS, maybe I CAN do this plant based eating junk after all.
And would you believe it but I actually MESSED UP A SMOOTHIE RECIPE. I don’t even know what to say about this except now I halfway hate smoothies, and halfway want to throw this vegan cookbook across the room.
The thing is… My blender suffered a terrible blow when I put frozen blueberries in it. It just sadly and pathetically did a half-hearted pummel of the bottom blueberries. It was a chunky smoothie. CHUNKY. I could taste all the health benefits of a whole blueberry because it was still whole. I tried jamming my spoon in to overturn the mess, stir it up, everything, but it was a woebegone train wreck that couldn’t be saved no matter how many times I hit the “blend” button.
To add insult to injury? I tasted it and all I could think was… This needs sugar. Jesus, I have a problem.
For the record, I now have a new magic bullet in the kitchen and no desire to make any smoothies. Ever.

LOL OH NO! May as well just eat blueberries whole, they taste yummy plain!!
