I recently rediscovered this “old love”. Honestly, I’m no longer as psyched about oatmeal as my younger self but I also no longer add a hunk of butter. Sacrifices will kill a dish if you let them.

However, I was perusing a cookbook, Vegan Cookbook for Beginners, and quite liked the idea of making their “Maple Cinnamon Oatmeal”. It also included a bit of applesauce in the mix, which sounded like the perfect addition!

I know that this is the kind of food that I would normally roll my eyes at and tell you, “Ugh, what is this? You can’t disguise the healthiness of oatmeal with cinnamon, gah!” But it turns out you can. The sweetness of maple syrup, along with the flavor of cinnamon and the tartness of apple makes this a pretty good breakfast and is probably the first vegan recipe that I can say “Yes!” to.
